Who doesn't like a good cheese dip?

It doesn't look like we are going to have our first BBQ in our new house this weekend. It may happen in a few weeks....which is fine by me because I am NOT ready for it! Instead we have been invited to another get together. I usually make a shredded Cheddar cheese dip with corn and salsa but I have found another great recipe at Allrecipes.com. I love this site. It has so many recipes...anything you can imagine.

I have decide to bring a crowd pleasing Buffalo Chicken Dip. I found the recipe here on Allrecipes.com. (Photo and recipe taken from Allreipes.com)

Ingredients

Have a GREAT Weekend!
2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup ranch dressing
3/4 cup pepper sauce (such as Frank's Red Hot)
1 1/2 cups shredded Cheddar Cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box chicken-flavored crackers

Directions

Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. cook, stirring until well blended ans warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle remaining cheese over the top, cover, and cook on Low setting until hot and bubble. Serve with celery sticks and crackers.

I may need to make a double batch it is so yummy!!

Have a great weekend!!

It's Party Time

We moved in to our new home almost 3 months ago and ever since everyone we know has been asking when we are going to have a BBQ. Well it looks like we have set a date! Next weekend! Now I keep telling myself "keep it simple," "don't go overboard," and "make it easy for yourself" Well I don't really think that is my style. I have found so many blogs with the BEST party ideas, I have way too many ideas in my head of what I can do!

I found a couple ideas to use on the Entertain Exchange blog found here.

I love the lemon label holders!

The lanterns are adorable.

And these have to be the cutest cupcakes for a BBQ EVER!!!!

Taken from the blog Frost Me which came from the cook book Hello, Cupcake, page 24.

SO many ideas...SO little time!

Have a great Wednesday!!

Slow Cooker Sunday Anyone?

Who wants to turn on the over when it is 90 degrees out? Not me! So instead the crock pot is coming out this weekend.

A few weeks ago I made some great pulled chicken sandwiches and might have to make them again. I found this recipe one in my Fix-it and Forget-it 5 ingredient magazine.
Fix-it and Forget-it....one of my favorite cookbooks!! (as you can probably tell)

Herbed Barbecued Chicken

Makes 4-6 servings / ideal slow cooker: 4 -to-5 quart

4 lb chicken cut up or 8 of your favorite pieces (I used boneless breasts)
1 onion, thinly sliced
18 oz bottle BBQ sauce ( I used Sweet Baby Ray's)
1 tsp. dried oregano
1 tsp. dried basil

1. Place chicken in slow cooker.
2. Combine onion slices, BBQ sauce, oregano and basil in a bowl. Pour over chicken, spread to cover.
3. Cover and cook on high for 1 hour and then 4-6 hours on low until chicken is tender but not dry.

Use this chicken to make open faced sandwiches. Simply shred the chicken and serve it on slices of French bread with a tomato slice, coleslaw and a pickle.

I used grilled hamburger buns and made regular sandwiches out of the chicken. The coleslaw really made the sandwich.
I would love to hear other variations of this great sandwich! Enjoy.
